Stone the raisins, and simmer them in a little syrup for a few minutes; add these, with the sliced citron, the almonds cut in dice, and the cherries drained from their syrup, to the ingredients in the freezing-pot; put in the Curaçoa and Maraschino, and freeze again; add as much whipped cream as will be required, freeze again, and fill the mould.

The jelly is then done, and may be poured into moulds which have been previously dipped in water, when it will turn out nicely for dessert or a side-dish; for the latter a little custard should be poured round, and it should be garnished with strips of citron or stuck with blanched almonds.

Liquid confects, or fruits either whole or in pieces, preserved by being immersed in a fluid transparent syrup; as the liquid confects of apricots, green citrons, and many foreign fruits.

Each garden is perfumed with the smell of honey; the granaries are full of wheat and barley; vegetables and reeds and herbs are growing in the parks; flowers and nosegays are in the houses; lemons, citrons, and figs are in the orchards."

Laurentius commends water-lilies, a vessel of warm water to evaporate in the room, which will make a more delightful perfume, if there be added orange-flowers, pills of citrons, rosemary, cloves, bays, rosewater, rose-vinegar, benzoin, laudanum, styrax, and such like gums, which make a pleasant and acceptable perfume.

It has several fertile vallies, which produce maize, rice, millet, potatoes, yams, bananas, pine-apples, citrons, oranges, lemons, figs, and tamarinds, and a sort of small nuts called by the French noix de medicine, or physic nuts.

Madagascar is an island larger than Great Britain, situated upon the eastern coast of Africa, abounding with all sorts of provisions, such as oxen, goats, sheep, poultry, fish, citrons, oranges, tamarinds, dates, cocoa-nuts, bananas, wax, honey, rice, cotton, indigo, and all other fruits common in that quarter of the globe; ebony of which lances are made, gums of several kinds, and many other valuable productions.

THE CITRON.The citron is a fruit very similar to the lemon, though larger in size and less succulent.

The citron is not suitable for eating in its raw state, though its juice is used in connection with water and sugar to form an excellent acid drink.

In the corners of the rooms are stands four or live feet high, on which they set plates of citrons, and other fragrant fruits, or branches of coral in vases of porcelain, and glass globes containing goldfish, together with a certain weed somewhat resembling fennel; on such tables as are intended for ornament only they also place little landscapes, composed of rocks, shrubs, and a kind of lily that grows among pebbles covered with water.

Next day mix in with the stewed cabbage one-fourth of a loaf of bread soaked in water and squeezed dry, one-half cup of flour, one-half cup of brown sugar, one-eighth pound of raisins, some finely chopped citron, one-fourth pound of almonds (mixed with a few bitter almonds), one-half teaspoon of salt, some cinnamon and allspice, about a teaspoon, juice and peel of one lemon and four eggs.

Grease a deep pudding-dish (an iron one is best), one that is smaller at the bottom than the top, grease it well, line the pudding-dish, bottom and sides, clear to the top, fill this one-third full with chopped tart apples, raisins, part of a grated lemon peel, citron cut quite fine, pounded almonds and melted drippings here and there.
