FRUIT JELLIES.

White granulated sugar is best for all jellies.

When the juice has become considerably evaporated, test it frequently by dipping a few drops on a plate to cool; and when it jellies sufficiently, remove at once from the fire.

CRANBERRY JELLY.Scald the berries and express the juice for other jellies.

Boil twenty minutes, add the sugar hot, and finish as directed for other jellies.

For each pint of the mixed juice, use one half pound of sugar and proceed as for other jellies.

Jelly prepared from peaches will not be so firm as many fruit jellies, owing to the small amount of pectose contained in their composition.

Express the juice, and proceed as with other jellies, allowing three fourths of a pound of sugar to each pint of juice.

Stone, and make in the same way as for berry and other small fruit jellies.

Hot buttered toast, tea, rich jellies, and other dainties so commonly served to the sick, are usually the very worst articles of diet of which they could partake.

JELLIES AND OTHER SIMPLE DESSERTS FOR THE SICK.

In 1683 we come to a little volume entitled "The Young Cook's Monitor," by M.H., who made it public for the benefit of his (or her) scholars; a really valuable and comprehensive manual, wherein, without any attempt at arrangement, there is an ample assemblage of directions for preparing for the table all kinds of joints, made dishes, soups and broths, frigacies, puddings, pies, tarts, tansies, and jellies.

"The treatise is divided into ten parts: cookery contains above an hundred receipts, pickles fifty, puddings above fifty, pastry above forty, cakes forty, creams and jellies above forty, preserving an hundred, made wines forty, cordial waters and powders above seventy, medicines and salves above two hundred; in all near eight hundred.
