THE FINS may be served as a plat d'entrée with a little turtle sauce; if not, on the following day you may warm the turtle au bain marie, and serve the members entire, with a matelote sauce, garnished with mushrooms, cocks' combs, quenelles, &c.

INGREDIENTS.6 sheep's brains, vinegar, salt, a few slices of bacon, 1 small onion, 2 cloves, a small bunch of parsley, sufficient stock or weak broth to cover the brains, 1 tablespoonful of lemon-juice, matelote sauce, No. 512.

Have ready some croûtons; arrange these in the dish alternately with the brains, and cover with a matelote sauce, No. 512, to which has been added the above proportion of lemon-juice.

In January 1548 leaving these islands, they came in sight of certain other islands, from which the natives came off to them, in a kind of boats, bearing crosses in their hands, and they saluted the mariners in the Spanish language, saying, Buenos dias Matelotes, or, good day companions.

From these unlooked- for circumstances, some of the Spaniards named these islands Islas de los Cruzos, or the Islands of Crosses and others called them Islas de los Matelotes, or the Islands of Companions[101].

He was engaged for innumerable pleasure-parties, dinners à la matelote, evenings with Madame de Chastellux, when the Abbé Délille read his verses, the theatre and opera with Gardell and Vestris, about whom all Paris was wild, and water-picnics on the Seine.
