The last group consists also of nitrogenized substances, which resemble gelatine in many of their characteristics.

Water, largely; carbonic acid, in considerable amount; ammonia (a nitrogenized substance;) salts of soda, potash and lime, and a trace of iron, all in quantities minute, to be sure, but to be counted in the aggregate of arrest of metamorphosis.

It saves them, too, the waste of those nitrogenized articles of food which require so much labor and forethought to procure.

But the herb under consideration contains a relatively larger proportion of inorganic salts, as those of lime, potassa, and ammonia,and especially of highly nitrogenized substances; which explains why tobacco is so exhausting a crop to the soil, and why ashes are among its best fertilizers.

It helps digest fatty matters by its emulsive powers; it has been more recently supposed to form a sort of peptone with nitrogenized articles also; but, what is more to our purpose, it turns starch into sugar even more quickly than the saliva itself.

These are ferments, such as Bacillus amylobacter, or butyric ferment, and B. septicus, or ferment of the putrefaction of nitrogenized substances.

Such are Mycoderma aceti, which converts the alcohol of fermented beverages into vinegar; Micrococcus ureae, which converts the urea of urine into carbonate of ammonia, and Micrococcus nitrificans, which converts nitrogenized matters into intrates, etc.

This ozonized oxygen, when brought into mixture with many nitrogenized bodies, forms with them nitrous acids, completely destroying their former condition and composition; hence, in the atmosphere, this part of the oxygen becomes a purifier of the whole mass, from which it removes putrescent exhalations, miasmatic vapors, and the effluvia from every source of sea or land.

While nitrogenized bodies are present, however, in the atmosphere, or in the humid artificial heaps of saltpetre plantations, the action of ozonized oxygen is on these, and the nitrous compounds formed unite with the bases lime, soda, and potash, also present, to form saltpetre.
