OYSTER PATTIES (an Entree).

Make the patty-cases as directed for lobster patties, No. 277: fill with the oyster mixture, and replace the covers.

FRIED PATTIES (Cold Meat Cookery).

Time.15 minutes to fry the patties.

CHICKEN OR FOWL PATTIES. 928.

When done, cut a round piece out of the top, and, with a small spoon, take out the bread (be particular in not breaking the outside border of the crust), and fill the patties with the mixture.

Lobster Patties.

"Oyster patties, galatine, cheese-cakes, and a bottle of champagne.

After puff paste has been rolled 5 times and chilled, roll to 1/2 inch thickness, shape with patty cutter, cut halfway through with a small cutter, chill again, and bake in oven at 550 degrees F. at first, reducing heat after 5 or 8 minutes to 425 degrees F., and turning often that patties may rise evenly.

These cheese tartlets, mock crab, patties, &c., can be most acceptably varied by using Shredded Wheat Biscuits in place of pastry cases or scallop shells.

Dresden Patties. Stamp out 6 or 8 rounds of bread, dip quickly in milk, gravy, or diluted extract, and drainon no account allow to soak.

These patties may also be made with shredded wheat biscuits.

Mushroom and Tomato Patties.

Rich Puff Paste suitable for patties, vol-au-vent, &c., is made as above, but with 6 ozs.

For patties leave the paste at last rolling out 1/2 inch thick.

Bake as for patties, but the larger piece of pastry will require longer to bake through and through.

It consisted of chicken patties, hot rolls, cream cheese and white grape salad, and vanilla ice-cream in blue frilled paper cases.

The menu had the same color harmony, and consisted of consommé, salted crackers, oyster patties, chicken jelly salad with green mayonnaise, salad rolls, olives, pistachio ice-cream in holly-decked cases, little cakes with green icing and silver bonbons stuck on top, and coffee, with green mints.

They may be served at once, or made into patties and browned in the oven.
