This is the Brassica oleracea of science, the Wild Cabbage, or Colewort, from which have originated all the varieties of Cabbage, Cauliflower, Greens, and Brocoli.

Small cauliflower, 12 to 15 minutes, large one, 20 to 25 minutes, after the water boils.

Drain them well, and dish them in the shape of a large cauliflower.

Sufficient,1 large cauliflower for 3 or 4 persons.

They are both well known; but we may observe, that the purple and white Brocoli are only varieties of the Cauliflower.

CAULIFLOWER.The cauliflower is less indigestible than the cabbage; it possesses a most agreeable flavour, and is sufficiently delicate to be served at the tables of the wealthy.

Persons of weak constitutions and delicate stomachs should abstain from cauliflower as much as possible.

CABBAGE, TURNIP-TOPS, AND GREENS.All the cabbage tribe, which comprises coleworts, brocoli, cauliflower, sprouts, and turnip-tops, in order to be delicate, should be dressed young, when they have a rapid growth; but, if they have stood the summer, in order to be tender, they should be allowed to have a touch of frost.

The potato has been handicapped for centuries by its ridiculous name, which is almost as cumbrous as "cauliflower" and even more unsightly to the eye.

A better plan is to put the trimmed cabbage or cauliflower head downwards into warm water for about half an hour.

This is a rather coarser variety of cauliflower.

CAULIFLOWER.

Support the cauliflower on a pudding basin or meat standanything which will raise it just above the level of the water.

The only person I ever knew who was honest in this respect, was a gentleman, the possessor of a beautiful seat, in a beautiful country, when he avowed his opinion, that there was "no garden like Covent-garden, and no flower like a cauliflower.
